Ravines Wine Cellars is a small, family-owned, award-winning winery in the Finger Lakes wine region of New York State, dedicated to the craft of fine, classical winemaking. Founded by Morten and Lisa Hallgren — a European-trained winemaker/oenologist and his chef wife — Ravines crafts elegant, expressive, small-batch wines using Old World practices, with each bottle reflecting the unique qualities of the vineyard sites, the growing season, and the winemaker's seasoned vision. Morten grew up on his family's estate winery, Domaine de Castel Roubine, in the Côtes de Provence, earned advanced degrees in Enology and Viticulture in Montpellier, and worked at Château Cos d'Estournel in Bordeaux before serving as chief winemaker at Dr. Konstantin Frank Cellars in the Finger Lakes.

Ravines' first vintage in 2002 pioneered a new style of bone-dry, mineral-tinged Finger Lakes Riesling. That Dry Riesling won Best Dry Riesling at the World Riesling Cup, and the winery went on to become the first non-dessert Finger Lakes wine on the Wine Spectator Top 100, with subsequent recognition from Wine & Spirits, The New York Times, Decanter, Bon Appétit, and Food & Wine. Today Ravines farms 130 acres of sustainably managed estate vineyards on limestone and shalestone soils near Seneca and Keuka Lakes, and also works with the famed Argetsinger Vineyard on Seneca Lake's eastern shore.

The Geneva winery and tasting room, next to Seneca Lake, looks out on the White Springs (Limestone Springs) Vineyard and is housed in a beautiful historic turn-of-the-century barn with high wooden beams and a slate roof, where visitors can look down into the barrel room through a window in the floor. Guests enjoy seated, guided tasting flights alongside fresh, seasonal fare from the on-premise Ravinous Kitchen. Tasting reservations are strongly encouraged.

The Ravinous Kitchen is Ravines' on-premise eatery, creating fresh, seasonal food daily to pair perfectly with their wines — named among Food & Wine Magazine's top winery kitchens in 2018. The seasonal Tastes Menu features small plates like smoked trout spread, whipped feta with Ravines' field honey, ciabatta flatbreads, and an FLX Farmers Board built from local producers including Muranda Cheese, Lively Run Creamery, and Blue Heron Bakery, with vegetarian, vegan, and gluten-free options.

The Ravinous Table & Tasting Table Experiences

Elevated wine-and-food experiences at the Geneva winery: the Tasting Table is a casual but elevated experience led by the staff sommelier including a tour, wine, and food, while the Ravinous Table is an elaborate experience for 14 guests at the antique farm table featuring sparkling wine, a hosted tour, and five courses paired with wine.

Barrel Room & Historic Barn

The tasting room occupies a renovated turn-of-the-century slate-roofed barn on the historic White Springs Farm (circa 1801), where visitors can look down into the basement barrel room through a window in the floor. The property is also available for weddings and private events.
